That beautiful thin base, a perfectly puffed but crispy crust, with a wonderful balance of tomato sauce and mozzarella - oh it just made me very happy! After having the chance to speak to the chef himself, I quickly learned why the pizza was so great - his passion starts from the making of the dough, which, is exactly how it should be.

Three days in the making. Gone in minutes...
Our pizza starts long before it reaches the oven. We give our dough 72 hours to ferment slowly, developing the flavour, texture and light, airy crust that makes every slice worth the wait.
Then come the classics: San Marzano tomato, fior di latte, fresh basil, extra virgin olive oil and carefully chosen toppings. Simple ingredients, plenty of character and no shortcuts.
And apparently, we’re doing something right - even Italian guests have complimented our dough and crust.
Good pizza takes time. Ours takes 72 hours.
